Do you mind if we skip over day 5 & 6?Honestly.
There was so much going on I didn't have time to post.
Lots of hikes, yoga in my heated workout studio, welcoming Greg home from an out of town trip, and getting Sweet-Pea ready for surgery early Monday morning. She's being spayed and I just can't stop snuggling my little girl.
Here we are on Day 7 and I've got the most scrumptious, hearty, healthy soup to share.
Greg and I just love this soup. It's jammed packed with nutrients and perfect for a cold, winter night.
Here's what is needed to make Pearled Barley Veggie Soup:
Pearled Barley Veggie Soup~ Adapted from Winter Vegetable Soup
Makes a huge pot!
3 tablespoons olive oil
1/2 cup white wine
1 large onion, thinly sliced
3 leeks, white & tender green parts, thinly sliced
3 garlic cloves, minced
3 carrots, sliced
1 1/2 cups celery, chopped
1 heaping cup pearled barley
1 cup frozen or fresh corn
8-10 cups vegetable or chicken stock
4 cups water
6 thyme sprigs or 1-2 teaspoons dried thyme
1 bay leaf 1 1/2 pounds celery root, peeled & cut into 1/2 inch cubes
1 pound {or a little more} parsnips, peeled & cut into 1/2 inch half moons
coarse kosher salt & freshly ground black pepper
1 pound baby spinach, kale or swiss chard
pinch of fresh nutmeg
Spinach is a star ingredient in this soup!
Heat the olive oil & white wine in a large pot.
Add the onion to the hot oil & white wine.
Add the leeks, garlic, carrots and celery.
Cook veggies until tender, about 5 minutes.Add the vegetable or chicken stock.
Add the pearled barley.
Add water and thyme.
Add the corn and bay leaf.
Bring the water to a boil.
Add the celery root and parsnips.Season with salt and pepper.
Simmer over medium heat until the barley and veggies are tender, about 30-40 minutes.
Add a pinch of nutmeg.
Add the spinach.
Gently stir the spinach into the soup.
So healthy!

Simmer just until greens are wilted, about 5-10 minutes.
Slice up some seedy, whole grain Dave's Peace Bomb Mini-Baguette.
