I used to think Santa wanted Christmas Cookies with SPRINKLES on Christmas Eve.Now I'm thinking he'd rather have these White Chocolate Cookies.
These are some big cookies! Jammed packed with all kinds of goodies I just know would energize Santa on his big night out.
Rolled oats, golden raisins, coconut, toasted pecans and white chocolate!
Sounds like an energy boosting cookie to me.Make these for Santa on Christmas Eve.
Reindeer like-em' too!

Can I just stop and say, it does not seem like Christmas should be next week!
Seriously. Is it really next week?
That just doesn't seem right.
But that's just me.
These cookies were whipped up special for a Holiday Bake Off sponsored by The Pampered Chef!

Let's get started on these White Chocolate Cookies.Here's what you need:
You'll also need toasted pecans!
White Chocolate Cookies:1 cup (2 sticks) unsalted butter, room temperature
1/2 cup sugar
1/2 cup packed light-brown sugar
2 extra large eggs
1 teaspoon pure vanilla extract {I used Pampered Chef Vanilla Extract}
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon coarse salt
2 cups old-fashioned rolled oats
2 cups white chocolate chips or chunks
1 cup sweetened flaked coconut
1 cup golden raisins
1 cup coarsely chopped pecans
***MILK for drinking & dipping when cookies are baked***
Recipe slightly modified from Martha Stewart's Cookies.
Preheat oven to 350 degrees. Line baking sheet with parchment paper.
I absolutely love this Pampered Chef baking sheet. It's aluminized steel and very sturdy. The Pampered Chef parchment paper fits perfect to the baking sheet.
Using an electric mixer cream the butter and sugars together.
Add vanilla and eggs and continue mixing on medium speed.
I fell in love with Pampered Chef's Vanilla Extract. It was rich and thick and smelled so good.
Sift together flour, baking soda, baking powder and salt.
Add dry ingredients to butter-sugar mix.
Cream together on medium speed til well combined.
Stir in the oats, white chocolate, golden raisins and toasted pecans.
Continue stirring everything together.
I dumped the cookie mix in a big bowl to make sure everything was well combined.
Using an ice cream scoop, scoop dough and drop on prepared baking pan.
Flatten the cookies just a bit.
Pop them in the oven to bake.
Bake at 350 degrees for 16-18 minutes.
These cookies bake up crispy on the outside and chewy on the inside.Basically the perfect cookie!
I sat down with a few of these and a glass of milk and didn't feel an ounce of guilt!These cookies are soooooo good!
G came home tonight and said these were the BEST cookies I had ever made!
I'm not joking. He said that!
