Wanna go to a baby shower!She'll be here in no time! Can you imagine being lucky enough to have the adorable Kristan from Confessions of a Cookbook Queen as your Mommy! Kristan is one of the cutest, funniest, sparkliest, REAL girls I know! She could seriously have her own t.v. show! I'm not even kidding! Kristan can make you laugh and SMILE like nobodies business! She also bakes up the most adorable treats!
When I think of Kristan I think of TWINKIES and PINK!
That's why I got brave and baked a Twinkie bite right into a cupcake~and tinted cream cheese frosting with cherry juice!
When I first thought about baking a Twinkie inside of a cupcake I popped over to see how Amanda bakes cookie dough in cupcake batter. Amanda freezes the dough first, then plops it in the cupcake batter to bake. That's what I did for these cupcakes.
Cut each Twinkie into 4 bites and freeze overnight.
If you have a friend who loves Twinkies!
If you love Twinkies!
Here's how you make Twinkie Cupcakes:
Follow your favorite white/vanilla cupcake recipe. I used Sweetapolita's Fluffy Vanilla Cake recipe.
Remove frozen Twinkie bites from the freezer.
Fill cupcake liners with one scoop {1/4 cup} of cupcake batter.Plop a Twinkie bite in the batter.
Cover Twinkie bites with just a little more batter.
Bake 18-20 minutes at 350 degrees.Take a look at the lovely~ness of these cupcakes with a TWINKIE baked inside!
Just knowing there's a TWINKIE inside the cupcake makes things so much fun!For the frosting you will need:
*4 cups powdered sugar {sifted}
*8 ounces cream cheese
*2 - 3 tablespoons heavy cream or half & half {milk works fine too}
*jar of maraschino cherry juice
Using an electric mixer, whip the cream cheese. Gradually add sifted powdered sugar to cream cheese. Add 2-3 tablespoons of milk depending on desired consistency of frosting.

Begin stirring in the cherry juice.

Add cherry juice to your heart's desire.
I ended up adding the entire bottle of juice.
Frost the cupcakes.
Sit cupcakes in the fridge until ready to serve.
Is that not the cutest little cupcake ever!
