Blackberry Muffins

Photobucket Nothing makes me feel more domestic than waking up on Saturday morning and making muffins. Especially muffins made with big, plump blackberries hand-picked right here on Bainbridge Island. There's just something about making muffins that seems very old~timey...like you're doing something from the olden days. These muffins are super easy and bake up with a crispy muffin top. I made these muffins for coffee on Saturday morning and Greg absolutely loved them.
Here's what you need to whip up these Blackberry Muffins on a Saturday morning. Photobucket
3 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 tablespoons ground cinnamon
1 1/4 cups milk
2 extra large eggs {slightly beaten}
2 sticks unsalted butter {melted}
2 1/2 cups fresh blackberries
1 1/2 cups sugar plus 1/4 cup more for sprinkling on muffin tops
Recipe modified from Barefoot Contessa at Home
Preheat oven to 375 degrees.
Melt the butter.

Sit butter aside to cool.
Sift flour, baking powder, baking soda, salt and cinnamon together.
Photobucket Photobucket Add dry ingredients to a large mixing bowl. In a separate bowl combine milk, eggs, and melted butter. Photobucket Make a well in the middle of the dry ingredients. Pour butter mixture in the well. Photobucket Stir until well combined. Photobucket Don't overmix. Photobucket Add 2 cups of blackberries to batter.
Add 1 1/2 cups of sugar.
Gently stir until well combined. Photobucket Photobucket Line muffin pans with paper liners. Photobucket Using an ice cream scoop, spoon batter into muffin cups. Add 2-3 blackberries to the top of each muffin. Photobucket Bake in 375 degree preheated oven for 15 minutes.
Remove the muffins and sprinkle sugar on top of each muffin. Photobucket Pop the muffins back in the oven. Bake for 5 to 10 more minutes until golden and crispy on top. Total baking time is between 20-25 minutes. Photobucket Serve while piping hot with milk or coffee. Photobucket You will love the crispy top of these muffins combined with the tangy, juicy berries jammed packed inside. The perfect Blackberry Muffin!

  3. Teresa, these look really yummy. Sadly down here in Oregon they have removed most of the blackberry bushes because they considered them an evasive spieces. :(...

  5. sorry to say, but these were an utter disaster. Had to pull them out because they were bubbling over liquid and burning (literally on fire) at the bottom of the oven. Hope other get better results.
