Nothing makes me feel more domestic than waking up on Saturday morning and making muffins. Especially muffins made with big, plump blackberries hand-picked right here on Bainbridge Island. There's just something about making muffins that seems very old~timey...like you're doing something from the olden days.
These muffins are super easy and bake up with a crispy muffin top.
I made these muffins for coffee on Saturday morning and Greg absolutely loved them.Here's what you need to whip up these Blackberry Muffins on a Saturday morning.

1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 tablespoons ground cinnamon
1 1/4 cups milk
2 extra large eggs {slightly beaten}
2 sticks unsalted butter {melted}
2 1/2 cups fresh blackberries
1 1/2 cups sugar plus 1/4 cup more for sprinkling on muffin tops
Recipe modified from Barefoot Contessa at Home
Preheat oven to 375 degrees.
Melt the butter.

Sit butter aside to cool.
Sift flour, baking powder, baking soda, salt and cinnamon together.
Add dry ingredients to a large mixing bowl.
In a separate bowl combine milk, eggs, and melted butter.

Stir until well combined.
Don't overmix.
Add 2 cups of blackberries to batter.Add 1 1/2 cups of sugar.
Gently stir until well combined.

Using an ice cream scoop, spoon batter into muffin cups.
Add 2-3 blackberries to the top of each muffin.

Pop the muffins back in the oven.
Bake for 5 to 10 more minutes until golden and crispy on top.
Total baking time is between 20-25 minutes.
Serve while piping hot with milk or coffee.
You will love the crispy top of these muffins combined with the tangy, juicy berries jammed packed inside.
