Black Bean Caviar

That's what Black Bean Caviar is all about!
Just like Southwestern Layered Dip and Rotel Dip are favorites for football, so is Black Bean Caviar.
One thing we miss the most living up here in the Northwest is ALABAMA FOOTBALL! 
Watching BAMA play on t.v. when family and friends are at the game is not easy. We try and make game day as festive as possible by decking out in BAMA colors and tailgating at home! BUMMER! One things for sure. The Crimson Tide has lots of fans way up here in the Northwest. We've got lots of friends who CELEBRATE the wins and championships with us! Photobucket Black Bean Caviar is a staple at any tailgating party. There are all kinds of recipes out there for "Caviar." What I like about this recipe is the apple cider vinegar.
Bragg's Apple Cider Vinegar is seriously THE BEST! Photobucket It's organic! It's raw! It's unfiltered! It's basically a POWER FOOD of sorts! Seriously. If you don't have Bragg's Apple Cider Vinegar in your life you need to. It's great for salad dressings combined with lemon juice, splash of olive oil and a little Stevia.
So here's what you need to make Black Bean Caviar:
2 cans black beans, drained
2 cans white corn, drained
1/2 cup sugar or Stevia to taste
1/2 cup apple cider vinegar
1/4 to 1/2 cup extra virgin olive oil {I go light on the olive oil. It depends on if you like things with a little less oil~which I do. You can go less than 1/4 cup if you like and this would still be perfect.} 
small container feta cheese
1 roughly chopped red pepper
1 roughly chopped yellow pepper
1 roughly chopped orange pepper heaping
1/2 cup fresh, chopped cilantro
garlic powder~coarse sea salt & black pepper to taste Photobucket Mix all ingredients together. Photobucket Photobucket
Refrigerate for several hours or overnight before serving. Photobucket Serve with Frito Scoops, Tostito Scoops or tortilla chips. Photobucket Perfect for football! 
Perfect for parties! 
Kids love it too! 
Overall a fab dip you will LOVE and make over and over again.

  2. For the love of my day! That looks so super tasty!! I'm not a football watcher, but maybe I will be just so I can sit down and eat this whole dip with out feeling guilty:) Where do you buy the apple cider powerhouse at? I'm thinking I'll check trader joes....

      This dip will last a week and still be great!
      We had if for the game on Saturday and we're still nibbling on it!
      The longer it sits the more the flavors blend.

    I looove dips like this, and yours sounds AMAZING, Teresa! Feta? Cilantro? Black Beans? Those are all my favorites!
