Sour Cream Almond Pound Cake Remember how I was talking about Fried Okra being a "classic Southern tradition?"
Well so is pound cake.
Every. Good. Southern. Cook. Has their favorite pound cake recipe. My Mother is very picky about pound cake. She's tried many recipes over the years and has only recently {within the last 10 years}, discovered her favorite all~time pound cake. If you can believe this, I had never made a pound cake until yesterday. After hearing Mother rave about this pound cake recipe, I decided to make my first, ever pound cake. Plus~when I come home to the farm, one of my favorite things to do is bake for Mother. Photobucket This pound cake has several things that fancy it up a bit. First of all, there's a mix of vanilla and almond flavoring. Also, it's made with sour cream which gives it that flavor that only sour cream can. Folding beaten egg whites into the cake at the end gives it a fluffly, light feel. Far too often pound cakes are heavy and dense.

Sour Cream Almond Pound Cake:
1 cup unsalted butter {softened} 
6 large eggs {separated} 
1/4 teaspoon salt 
1/4 teaspoon baking soda 
1 teaspoon vanilla extract 
1 teaspoon almond extract 
3 cups sugar 
3 cups sifted all-purpose flour 
1 8oz. container sour cream 
Preheat oven to 300 degrees. Photobucket You'll also need a 10" tube baking pan. Photobucket Grease and flour the pan.
Photobucket Beat butter and sugar until well blended. Photobucket Separate eggs. Photobucket Beat in egg yolks. In a medium size bowl combine sifted flour, salt and soda. Sift once again. Photobucket Alternate adding flour and sour cream and extracts~{beginning and ending with flour}. Photobucket
Photobucket In medium sized bowl, beat egg whites until slightly stiff. Don't over beat. Photobucket Stir 1/3 of egg whites into the batter. Photobucket Gently fold the remaining egg whites into batter. Photobucket Pour into prepared tube pan. Photobucket Photobucket Bake at 300 degrees 1 1/2 - 1 3/4 hours or til cake tester comes out clean. Photobucket The perfect pound cake.
Pound cake doesn't get any better than this.
Look at that crusty top.
It always bakes up beautiful.
Cool cake for 5 minutes. Run a long thin knife around the sides to separate cake from pan sides. Carefully remove cake and set on rack to cool. Photobucket Sour Cream Almond Pound Cake!
So yummy with homemade vanilla ice cream. Also good with fruity syrups.

  5. I can't tell you how many pound cake recipes I've bombed over the years. This one is on my list for holiday baking. It's one of my mom's favorite pound cake flavors. Maybe I should make her one (or 2) for Christmas?
