Salted Caramel Corn with Almonds

Salted Almond Caramel Corn Hey Guys!
I'm still down here on The Farm, way out in the country.
Days are basically spent walking the dirt road every morning, sipping green smoothies after the walk, sitting in the sun, swimming laps in the afternoon, visiting with family, watching football, enjoying fires by the pool at night and cooking fun food.
Speaking of fun food~my parents love to nibble on caramel corn. My Mother pours up a little bowl and nibbles it with her afternoon cup of coffee.
We love to bake up big batches of caramel corn and we've always used this over~the~top recipe!
What puts it over~the~top are the salted almonds and the combination of butter, almond and vanilla flavors.
It's perfect for this time of the year! Salted Almond Caramel Corn It's easy~peasy to make! Photobucket You won't believe how easy!
Here's what you need: Photobucket 3 bags plain microwave popcorn {popped & lightly salted} I used Orville Tender White
1 cup butter
2 cups light brown sugar
1/2 cup light Karo
1 teaspoon salt
1/2 - 3/4 teaspoon butter flavoring
1/2 teaspoon almond extract
1 teaspoon vanilla extract
1/2 teaspoon baking soda
2 cups roasted, salted almonds
Coarse sea salt to sprinkle
Preheat oven to 250 degrees. Photobucket Melt butter in large saucepan over medium heat. Photobucket Stir in brown sugar. Photobucket Add Karo syrup.
Stir in salt, butter flavoring, almond extract, vanilla extract, and baking soda. Photobucket Bring to a boil stirring constantly. Boil with little or no stirring for 4-5 minutes, or until a candy thermometer reaches 240 degrees. Remove from heat. Spray large, deep baking pan or jelly roll pan with cooking spray. You may need 2 large jelly roll pans.Photobucket Stir in almonds. Photobucket Add popcorn to baking pan. Photobucket Pour caramel mixture over popcorn. Photobucket Stir until popcorn is coated.
Bake at 250 degrees for one hour stirring every 15 minutes. Photobucket
Sprinkle with coarse sea salt.
Cool completely stirring to break into small bite size pieces. Store in airtight container.
Serve at parties in fancy jars!
