Fried Okra Chunks
Fried Okra.
A classic Southern tradition.
Every Southern cook has their favorite way to fry okra.
I fried my first batch of okra when I was in college. Up until then all I knew was my Mamaw's fried okra. When Mamaw fried okra she burned it to a crisp. Mamaw's fried okra was black, and greasy, and served at every dinner I can ever remember at her house.
Deciding to fry my own okra was a turning point in life. When you grow up in The South and watch your Grandma and Mamaw and Mother cook Southern food,  it's a big deal when you set out on your own to cook up a classic you've been watching them cook for years. It's definitely a sign that you're maturing~you know~becoming you're own SOUTHERN WOMAN. I'll have to admit. As much as I loved my Mamaw's fried okra~I seriously took okra to a new level when I fried the first batch. I've always called my okra~Fried Okra Chunks. That's because it always ends up in big chunks of crispy batter with okra sprinkled throughout. Fried Okra Chunks Frying okra here on the farm is an event. First you have to head to "Harold's" garden to cut it.
Photobucket Harold is our closest neighbor here "in the country." He lives 2 miles down the dirt road. Harold is a real farmer. We're just pretend farmers. The first year we lived on the farm we had our own garden. That was the first and last year. Harold is very generous to let us call his garden our own. If you haven't met Miss Lila up there in the Ranger she's the new Queen of the Hill. Lila is my parent's Soft Coated Wheaten Terrier. One sweet day I'll tell you the story of this furry~angel. For now I'll just say she wears a heart around her neck that reads "Murphy's Angel."
Back to okra.
Once you get back home with the okra you let everyone know "we're having FRIED OKRA for dinner!
Here's how you make what I call Fried Okra Chunks: Photobucket Begin by washing the okra. Photobucket Slice the okra. Photobucket Sprinkle okra with sea salt. Photobucket Here's what you need for liquid mixture to pour over the okra: Photobucket 2 eggs {slightly beaten} 
1 1/2 cups buttermilk 
1/2 teaspoon sea salt 
1/2 teaspoon seasoning salt 
1/2 teaspoon pepper 
1/2 teaspoon garlic salt Photobucket Mix buttermilk and eggs together. Stir in salt, pepper, seasoning salt and garlic salt. Place okra in a shallow baking pan. Photobucket Pour buttermilk-egg mixture over okra. Photobucket Make sure liquid is covering all the okra. Photobucket Let okra soak in buttermilk mixture for at least 30 minutes. This is a good time to prepare the cornmeal mix. Photobucket 3/4 cup all purpose flour 
1 1/2 cups self-rising cornmeal 
1/2 teaspoon sea salt 
1/2 teaspoon pepper 
1/2 teaspoon seasoning salt 
1/2 teaspoon garlic salt 
Mix all ingredients together. Photobucket Gradually sprinkle 1/2 the cornmeal mix over soaked okra. Photobucket Gently stir~absorbing liquid and coating okra. Add almost all of the cornmeal mix dependent upon how much okra you're frying. Photobucket Continue to mix the cornmeal in with the okra.

The mixture will become a bit pasty. Gently pat/press okra mix down in the pan. Photobucket Pour cooking oil 1/2 way up a cast iron skillet or frying pan of choice. Photobucket Heat the oil over a hot flame. Make sure the oil is hot/ready before adding okra. Oil is ready when a little flick of buttermilk-cornmeal mix sizzles when dropped into oil. Scoop up okra mix using a spatula. Photobucket Add 4 scoops of mix to the pan. Let it fry oh high heat til bottom of each okra cluster is browned.Photobucket When one side is brown~gently flip the cluster and cook until almost brown. Photobucket Begin breaking the okra clusters into chunks using a slotted spoon or a spatula. Fry the chunks until golden brown and crispy. Photobucket Remove from frying pan. Let oil drip before transferring to a baking pan lined with lots of paper towel. Photobucket Let paper towel absorb some of the oil.
Sprinkle with coarse sea salt while warm.
Serve hot or warm. I've even eaten them cold too.

  2. OK...I am so in love with the fact that you fry your okra in CHUNKS!!! I've never had a desire to make my own fried okra...although I order it at our favorite BBQ place...but NOW, I feel I must make it.

    And if fried okra CHUNKS make me CHUNKY, I know it will be will worth it! ;)

  3. Would you believe that I've never, ever cooked with okra? I'm not actually sure if I've ever tasted it beyond the pickled variety either unless I had it in a dish by accident! Would love to try- this looks great!

  4. Have tried to replicate my grandma's okra frying technique... it is hit or miss... but I think I will give this a try next time we have a hankering for some fried okra!! Thanks for the recipe!
