
Rolling balls in coconut instead of powdered sugar was a GIGANTIC change.
I was seriously wondering who this girl was in my kitchen.
The first thing you let go of when you're cleansing is sugar.
That's because sugar is highly acidic.
I'm learning all about highly acidic foods and how they impact our bodies.
Wednesday night Stephanie~Health and Wellness Coach, kicked off the Summer Sparkle Cleanse
with a 90 minute conference call.
She explained how the Standard American Diet (SAD) is jammed packed with foods
that are highly acidic.
Bodies that are too acidic can experience things like inflammation, overweight, fatique, headaches,
unhealthy skin and negative thoughts.
I don't know about you.
But I'm not too keen on living with all of these toxic ways of feeling.
I'm almost positive I've been experiencing INFLAMMATION of the BOOBS and TUMMY!
Just sayin'.
That's why I decided to roll these energy balls in organic shredded coconut versus powdered sugar.
These little balls are perfect to satisfy a sweet craving while cleansing.
You certainly couldn't sit back and pop them like truffles during the cleanse.

Let's talk about these yummy Raw Energy Balls rolled in coconut.
The star ingredient here is medjool dates.

You'll find these juicy, plump dates in lots of raw recipes.
Here's what else you need:
1 cup raw almonds
1 cup medjool dates
1/4 cup raisins
1/2 cup oats
1/2 teaspoon cinnamon
1/2 teaspoon sea salt
1 teaspoon vanilla extract
1/2 cup raw almond butter
1/4 cup of h20 {if needed}
Recipe modified/inspired by The Whole Life Nutrition Cookbook.
Begin by processing the almonds.
You can make the entire recipe in the food processor but mine wasn't large enough.
I've got to get a larger processor.
Pour the ground almonds in a large bowl.
Now process dates, raisins, cinnamon, sea salt and oatmeal.
Add the dates, raisins and oatmeal, cinnamon and sea salt to the bowl.
Add coconut, almond butter and vanilla.
Mix it all up.
Add water if the mix is too dry.
Now add 4 packs of Stevia.
Stevia sweetens the energy balls.

I get this Stevia at Trader Joe's and I really like it.
Just incase you don't know.
I like things sweet!
Pop the bowl in the freezer for 30 minutes.
This will make rolling the balls easier.
Scoop balls out with a cookie scoop.
Roll the balls compressing ingredients.
Now comes the fun part.
Roll the balls in coconut, pressing coconut into the ball as you roll.
Keep on rolling and pressing in coconut.
There you have it!

That is my kinda food sista - I feel like quitting everything I'm doing right now and go make some of these.
ReplyDeleteFYI, we used to own a fabulous café and for a few years I lived on espresso and brownies - no really, I did! When we sold the cafe I was a serious sugar addict. I read a book called Eat Yourself Slim by Michel Montignac to ween myself off the sugar. the book is all about eating well without sugar and highly refined foods. That book changed my life. so I know what you're going through.
