Vidalia Onion Tomato Pie

My Daddy will tell you there's a tomato~
 and then there's a TOMATO.
He'd also tell you until you've tasted an ALABAMA TOMATO
you've never tasted
a real tomato.
You can bet this Vidalia Onion Tomato Pie was made with homegrown ALABAMA tomatoes.
This recipe has long been a favorite here on the farm.
Honestly~
it's one of the best things I've ever tasted.
Especially when it's made with really good tomatoes.
Here's what you need to make this scrumptious pie:
3 medium to large tomatoes {thinly sliced & drained}
1 medium vidalia onion {thinly sliced}
1 cup chopped fresh basil
1 pie crust
2 cups grated sharp cheddar cheese
1 cup mayonaise
1 1/2 cups parmesan cheese
salt and pepper to taste
~Preheat oven to 350~
Slice the tomatoes.
Place tomatoes in a colander sitting in a shallow bowl.
Sprinkle the tomatoes with sea salt.
Salting helps the tomatoes to "sweat" out some water.
Sit tomatoes aside.
Roll out the pie crust pastry.
Using a fork~
poke holes in the bottom of pie crust.
Bake pie crust at 350 just until lightly brown~
about 10 minutes.
After you take the pie crust out of the oven preheat the oven to 375 degrees.
Grate the cheese.
Mix cheese and mayo together.
Sprinkle salt and pepper and stir til combined.

You probably know he's my nephew.
You may not know Griffin loves to cook~and chop~and grill!
Griff will be putting the pie together as I take pictures!
Thinly slice the vidalia onion.
Chop the basil.
Layer the bottom of the pie crust with vidalia onion slices.
Sprinkle onion with 1/2 the basil.
Begin layering the tomatoes.
Keep on layering tomatoes.
Sprinkle remaining basil on top of tomatoes.
Add more onion~
to your hearts desire.
***Adding more onion is optional.***
Remember that cheese~mayo mix?
Spread it all over the top of the tomatoes.
Top it with parmesan cheese.
Bake the pie at 375 degrees for 45 minutes.
If the crust begins to brown cover the edges of the crust with foil or pie crust baking covers.
Let the pie sit 15-20 minutes before serving.
Can I just say.

It truly is one of the yuMMiest things you'll ever taste.

  8. I'm luckily still in Nashville...so maybe I can get my hands on Alabama tomatoes. We're driving back to WA next month & I will sure miss it here. Love the fried okra, sweet potato pie, catfish, cornbread...and now your yummy looking tomato pie will be on my list! Cheryl Ann

  9. My mouth is watering just *thinking* about this pie! Oh. My. Word....it looks delicious! I love those RED tomatoes! And you're right...I remember driving to the produce stand when we lived in Alabama and coming home with a basket of tomatoes!

    Love how Griffin is such a good cook! He'll be set when he goes to college! Whipping up Tomato Pie for the girls! ;)
