Remember Oatmeal Creme Pies?
You know...the Little Debbie's.
The ones on the kitchen counter at your Mamaw's house.
The ones that never tasted so good as they did in your Mamaw's kitchen.
What was it about those creme pies?
So good.
That's afeeling taste you don't forget.
I've always wanted to make some.
So I did.
I used an old recipe written in my Mother's handwriting.
How SWEET is that.
Here's what you need to make Oatmeal Creme Pies.

Preheat oven to 375 degrees.
Begin by creaming the butter.
Add the white sugar.
Add the brown sugar.
Keep on whipping and creaming.
Add the egg and vanilla.
Continue mixing ingredients.

Preheat oven to 375 degrees.
Begin by creaming the butter.
Add the white sugar.
Add the brown sugar.
Keep on whipping and creaming.
Add the egg and vanilla.
Continue mixing ingredients.
Mix the dry ingredients together.
Add the oats in with the dry ingredients.
Stir together.
Gradually add this mixture to mixing bowl.
Mix until combined.
Use a small cookie scoop to scoop dough.
Place the dough balls at least 2 " apart on baking sheet lined with parchment paper.
Bake the cookies @375 for 10 minutes.
Leave on pan to cool (and continue baking) for 2 mins.
Transfer to cooling rack.
Let the cookies COOL completely.
Here's what you need to make the creme filling.
See recipe above for measurements.
Begin by creaming the butter.
Sift the powdered sugar.
Add the powdered sugar to the butter and mix.
Add the vanilla and 2 T. whipping cream.
Mix on medium speed until combined.
Turn the mixer on high and whip the filling for about 2 minutes until fluffy.
Now comes the FUN part!
You know what to do.
Try not to pass~out on the kitchen floor when you take the first bite.
Seriously.
I mean it.
Seriously.
This is one of THE BEST things I have ever~ever~ever tasted.
Take me SERIOUS please! ;)
I resisted and didn't double the filling recipe.
Turns out...I had cookies left over.
No worries.
Double the recipe if you want plenty of filling. ;)

We saw them at the store and my kids begged me to get them, but I told them we could make them better at home. I was so happy to see this post!!! They will love these.

I didn't have anything but instant oats, and couldn't go to the store. BUT I also could not wait to try these cookies!! I used instant. Sorry. They still turned out DELICIOUS. And pretty, too! I rolled mine out in little balls and pressed the tops down and they were perfect little circle cookies when they were done. I think next time I do them, I will cook them less time. My cookies turned out a little crunchier than I like them. But..do you think that stopped me from eating 3 of them today? The answer is No.
ReplyDeletemade this recipe, but disappointed...didn't (in my opinion) resemble a 'little debbie snack', but moreso (what it actually is!) two oatmeal cookies sandwiched together w/ buttercream frosting.

ReplyDeleteI have tried making these types of cookies a few times, and they always taste delicious, but my cookies don't flatten out that much, so to sandwich 2 together you have to have a pretty big mouth to get around that sucker. What is the secret to really flat cookies like that?

ReplyDeleteMine didn't spread out like yours either:(. I had to press them down with a spatula as soon as they came out. They are also very crumbly. I used silpat instead of parchment and white whole wheat flour. Maybe that made a difference?
ReplyDeleteMy husband just told me he is never going back to Little Debbie after my attempt at these. Isn't that the cutest? Thanks for this recipe! My first batch flattened beautifully though I didn't have the deep brown color yours achieved. My second batch fluffed up a bit more. Either my oven wasn't finished preheating on the first batch, or the fact that I opened the oven door so many times to check the color, had some effect on them flattening. I'll be checking back on your site for more delicious ideas!

ReplyDeleteJust made these today. Taste great but my first batch of cookies would not flatten so I had flatten the rest before putting them in the oven. The frosting didn't come out either and I double checked all the measurements. Not sure what happened?
ReplyDeleteNo wonder ours didn't turn out right, she didn't say to use unsalted butter. All I did was copy down the recipie and make it not look at the pictures.

How do you store them if eating the next day. Frosted or unfrosted? Fridge? They are amazing. I used instant oats. I will have to try old fashioned next time m
ReplyDeleteOhh, i think you just made my son a happy camper. He loves Little Debbies oatmeal cream pies but i dont buy them anymore due to the high fructose corn syrup and other not so good for you things in them. I can't wait to make a batch of these and see how he likes them.
