Chicken Pot Pie

Chicken Pot Pie... is COMFORT.
Serve it up with a huge helping of sour cream mashed potatoes.
Honestly...there's just nothing better.
That's why I always make a Chicken Pot Pie when I have dinner guest.
I also like to take a Chicken Pot Pie to FRIENDS.
Especially friends who need a bit of COMFORT.
I have several recipes for Chicken Pot Pie.
When I have lots of time...I use Ina's recipe.
When I don't...I wing~it a bit.
Years ago I started out making Chicken Pot Pies with this recipe.
Here's what you will need:
Begin by boiling your chicken and creating a yummy broth at the same time.
Add chicken to the pot with a bit of salt and pepper and chicken stock.
Roughly chop celery~onion~and carrots.
Add the veggies to the pot.
I like to toss in a splash of white wine.
If the broth needs more flavor add chicken granules.
Bring the broth to a boil.
Simmer the chicken broth on low for about an hour.
Pour a little olive oil and a tad of butter in a skillet.
Saute mushrooms~onion~and celery.
No worries about exact measurements.
Just toss some in the skillet and saute.
Sometimes I add a splash of white WINE as I saute.
I know...there's lots of ALCOHOL in this pie...
what can I say?
Add the sauteed veggies to a BIG vintage {yes...it must be VINTAGE} bowl. ;o)
If you have some on hand...cook up a little peas and pearl onions.
I made this pot pie for years without the pearl onions.
The first time I added the pearl onions...I couldn't believe the flavor they added.
Plus...they're CUTE!
If you don't have any on hand...no worries.
Add the chicken to the bowl.
I like BIG chunks of chicken.
Add the peas and pearl onions.
Is that lookin' good or WHAT?!
I hope you're believing me when I say this is one of most COMFORTING things
on earth to ENJOY~

Add 2 cans of Veg~all!
Good ole' VEG~all!
It's been around for years.
Now take a can of Cream of Chicken soup...or Cream of Celery...or both.
I like to mix the soup with a bit of chicken broth.
Add it to the bowl.
{Don't overload the filling with chicken broth...it will be too runny.}
If I told you I could eat this ENTIRE bowl of chicken pot pie filling...would you believe me?
Put the filling in a baking dish.
I don't use a crust on the bottom of my pie.
I also make Greg a little pot pie when I'm delivering the big one to friends.
{Greg's so LUCKY~} ;o)
Now it's time for THE CRUST!
Roll out 2 Pillsbury Pie Crust.
This crust totally ROCKS!
No need for homemade crust.
Give it a little egg~wash.
{You can use just egg whites for this or one beaten egg.}
Add some LOVE to the top of your pie.
The egg~wash serves as glue.
Cut 4 little slits in the top of the pie.
Sprinkle a little course sea salt and ground pepper on the top.
And don't forget the hubby!
Top his pie with extra SWEET~LOVE!
I did say Greg was LUCKY...right? ;o)
Bake the pies on a cookie sheet.
Sometimes they bubble up and over the baking dish.
Bake at 350 for 30~40 minutes.
If the edges of the crust brown before the center of the pie...cover the edges with foil.

I promise I'll make you one of these.
Next time you need a little COMFORT...bake a Chicken Pot Pie.
I promise...I promise...whoever you serve it to...will LOVE you forever and ever!

  11. My recipe is almost exactly like yours, except I don't use Veg-all...I boil my own carrots and potatoes and I add caramelized onions to mine. Yummy! I use one can of cream of celery and one can of cream of mushroom. I made individual size pies since we LOVE having plenty of crusts.

  15. Teresa I *heart* homemade chicken pot pie too. My children grew up on it. Especially in winter because I would make it once a week. My family devours it. I make mine very very similar with organic ingredients and chicken breast, BUT I make my crust homemade too. You really truly must try making the crust homemade...it is so delicious. Yummy yummy, I just may have to make one tonight.
